Tahdig Workshop with Chef Louisa Shafia at Layla's Table
Tahdig - one of the most coveted elements of any Persian meal, is a divinely delectable combination of art & science, offering a feast for all one's senses.
Join Layla for a delicious afternoon at the farm with guest Chef Louisa Shafia, author of the renowned cookbook The New Persian Kitchen, whose writing and recipes have been featured in The New York Times, The Wall Street Journal, and Food & Wine, among many others.Â
She’ll show us how to make tahdig, the famous crunchy rice at the bottom of the pot aka Iranian soul food, and how to prepare saffron for cooking in Persian recipes. We will have Persian snacks including a sabzi khordan platter featuring feta cheese and fresh herbs, dips, and seasonal produce. Everyone will get to taste the tahdig along with fluffy, Persian-style saffron rice!Â
Layla  will lead us in a traditional Iranian esfand incense ceremony, and we’ll take a walking tour of the farm.
Workshop includes:
- Tahdig making demonstration and talk about Persian food with Chef Louisa Shafia. We will learn how to prepare saffron for Persian cooking, and get familiar with sumac, dried lime, rose petals, and other essential seasonings used in Persian cooking.
- Persian snacks
- Sabzi khordan, platter of fresh herbs and feta cheese, Persian flatbread, walnuts, and radishes Kashki Bademjan, eggplant dip with caramelized onions
- Borani-yeh laboo, beet yogurt with dried mint
- Tahdig and saffron rice
- Seasonal produce from local farms
- Wine and sparkling water
- Traditional esfand ceremony
- Walking tour of Honey Hollow Farm
